De herfstbok


Met het einde van de zomer en de naderende herfst komen er ook weer zaken aan bod waar wij dan weer wél heel erg gelukkig van worden. Zo is daar spoedig weer de herfstbok (of herfstbock zo u wilt;))! Als rechtgeaarde bierofielen maken we je hier graag wat wijzer over.

Bokbieren zijn van oorsprong van Duitse origine, maar in Nederland is hierop de afgelopen decennia een geheel eigen traditie ontstaan met de herfstbok als typisch Nederlands fenomeen. Waar het klassieke bokbier een ondergistend donker bier met een bitterzoete en moutige smaak is, wordt hier in de Nederlandse herfstboktraditie steeds vaker van afgeweken en is feitelijk alles mogelijk. Meer en meer brouwers brengen een bovengistende herfstbok op de markt die neigt naar een dubbel. Voor (kleinere) brouwers is de herfstbok een ideaal bier om te experimenteren en een iets uitgesprokener bier te produceren. Dit levert dan ook van tijd tot tijd opvallende pareltjes op!

Ook al is de herfstbok vaak geen bokbier meer in de traditionele zin van het woord, deze bieren kenmerken zich vaak toch door de donkere kleur en de zoete en zachte tonen (denk aan zoethout, karamel, donker fruit). Laat dit nu fantastisch combineren met enkele gerechten van onze nieuwe herfstkaart zoals de ribeye met aardappelcrumble, spek en knoflookjus, of de steamed bun in bruinbier gevuld met zwijnswang. Bij ons drink je dit najaar in ieder geval de dubbelbock van Brand, de Chouffe Herfstbok en de IJbok van Brouwerij ’t IJ.

De perfecte biefstuk


Rib-eye, entrecote of ossenhaas? Ze komen regelmatig voorbij op onze kaart, maar hoe bak je nu eigenlijk zelf de perfecte biefstuk? Dikte van de biefstuk, structuur van het vlees, de pan, het heeft allemaal invloed. Met deze handige tips kom je een heel eind.

  • Zout en peper
    Zout het vlees voor het bakken. Zout voor het bakken trekt in het vlees en zorgt voor een ‘krokant korstje’. Peper de biefstuk na het bakken zodat de peper niet verbrand.
  • Boter en/of olie
    Boter geeft smaak, maar verbrand eerder. Voeg een scheutje olie toe aan de boter om hogere temperaturen te bereiken. Ben je niet zeker, gebruik olie.
  • Bakken
    Bakken doe je op hoge temperatuur. De pan moet dus goed heet zijn. Zorg voor een pan met een dikke bodem die de hitte vasthoudt. Je wilt bakken, niet sudderen.
  • Cuisson
    En dan nu cuisson, oftewel garing. Hier wordt het tricky. Simpel gezegd, hoe meer het vlees terugveert wanneer je erin drukt, hoe gaarder. Baktijd aangeven is moeilijk, maar zie de tabel hieronder voor een grove richtlijn. Practice makes perfect!
  In de pan Kerntemperatuur (oven)
Rood (‘rare’ of ‘saignant’) dichtschroeien is voldoende 45-50°C
Licht doorbakken (‘medium-rare’) 1 à 2 minuten bakken per kant 55°C
Half doorbakken (‘medium’ of ‘à point’) 2 à 3 minuten bakken per kant 63°C
Doorbakken (‘well done’ of ‘bien cuit’) 3 à 4 minuten bakken per kant 70°C
  • Even laten rusten
    Ja, altijd. Verpak de biefstuk (losjes) in aluminiumfolie, minimaal 8 minuten. De vleessappen worden tijdens het rusten weer opgenomen in de vezel van het vlees. Hiermee blijft je biefstuk smaakvol en sappig. Bon appetit!

Yus ipv zjuu


Onze naam is Bistro Bar JUS (in de Tielse volksmond gewoonlijk uitgesproken als yus ipv zjuu), maar waarom nou jus? De officiële lezing luidt als volgt:

We danken onze naam aan de basis van ieder geslaagd gerecht. Goede jus is goud, omdat het alle elementen bevat die van eten een beleving maken. Groente, vlees, warmte en de juiste dosis vakmanschap zorgen voor de beste jus en juist dat zijn de ingrediënten die we met liefde serveren.

Simpel gezegd is jus de kers op taart, de BBQ na een lange stranddag of een Irish Coffee op een luie zondagmiddag. Jus is hetgeen dat alles samenbrengt en afmaakt. Goede jus is dus goud, maar wat is dat dan ‘goede jus’? Voor de liefhebber ons receptuur voor een flink pannetje jus;)

Men neme:

5 kg kalfshakken

500 g tomatenpuree

200 g winterpeen

200 g knolselderij

200 g prei

200 g ui

5 tenen knoflook

1 takje tijm

2 blaadjes laurier

5 g peper

5 liter water

Bereiding

  • Snij de groente grof en was deze
  • Zet de oven op 200 graden
  • Rooster de kalfshakken in de oven goudbruin
  • Voeg de tomatenpuree toe en laat 4 minuten in de oven staan
  • Gooi de kalfshakken in een grote pan, vul de pan met het water, laat het geheel aan de kook komen en schuim af
  • Voeg de groente en de kruiden toe en zet het vuur laag
  • Laat de bouillon 6 tot 7 uur op een laag vuurtje trekken (wel af en toe afschuimen)
  • Zeef nu de JUS (liefst door een natte doek)
  • Plaats de gezeefde JUS in een schone pan weer op het vuur en kook in tot +/- 2,5 liter en breng op smaak
  • TIP!!: Als de JUS nog vloeibaar is (wanneer deze afkoelt geleert deze door de gelatine uit de kalfshakken) portioneer in ijsblokbakjes en vries weg.

Voilà, de jus de veau is klaar. Het kost tijd, maar iedereen kan dit. Kom je er niet uit, neem contact op en vraag naar Casper;) Hij legt het je graag uit. Deze jus de veau is zo al heerlijk maar kan ook als basis dienen voor rode wijn jus, knoflookjus en kruidenjus. Succes en tot gauw bij JUS! Laat het je smaken!
